Creamy White Chili

In a word: mmmmmm...


1 medium onion, chopped
1 1/2 teaspoons garlic powder
1 Tablespoon vegetable oil
2 cans (15 oz. each) Great Northern beans, rinsed and drained
1 can (about 14 oz.) chicken broth
2 cans (4 oz. each) chopped green chilies
1 teaspoon salt
1 teaspoon cumin
1 teaspoon oregano
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper (adjust to taste)
2 to 3 cups diced, cooked chicken
1 cup sour cream
1/2 cup whipping cream

In large saucepan, saute onion in oil to soften. Add garlic and cook for one minute. Add beans, broth, chilies, and seasonings. Bring to a boil. Reduce heat and simmer, uncovered, for 30 minutes, stirring occasionally. Add cooked chicken and simmer for a few minutes more. Remove from heat; stir in sour cream and whipping cream. 6 servings.
